You could describe it as an unofficial holiday, yet it’s become one of the most celebrated days of the year…and the yummiest! Super Bowl Sunday. No matter what teams are playing, friends and family come together to watch the game, drink lots of booze, and EAT!

    Super Bowl parties are THE BEST parties, because it’s usually a buffet of all kinds of food. Saucy wings and meatballs, various dips, charcuterie trays, brownies…I mean the list goes on. But one thing is for sure, the greasier and messier the better!

    “Crock potting” takes just a few easy steps, you can leave your house, go to work, run your errands, come back a few hours later, and dinner is ready. That’s why it’s so great to use for Super Bowl Parties. Instead of spending your whole day cooking, throw something in the crock pot and Voila! By game time, you’ll have a dish that will score big at your Super Bowl party.

    One way to make sure everyone is fed at your party this Sunday, is with a taco bar! This is my favorite go-to recipe for any occasion. My friend Taylor, who I lived with in California, got me HOOKED on this crock pot chicken taco recipe. Not only are these delicious, but they are also super easy to make!

    • 4-5 Boneless Skinless Chicken Breasts
    • 1 Package of McCormick’s Chicken Taco Seasoning
    • 1 16 oz Herdez salsa (medium)
    • 1 16 oz Herdez salsa (hot)
    • Sriracha

    Line bottom of the crock pot with chicken breasts. Next, put on the chicken taco seasoning. Pour HALF of the Herdez medium salsa and HALF of the Herdez hot salsa evenly across the chicken. Then, take your sriracha (depending on how spicy you want your tacos) and disperse it on top. Cook on HIGH for about 4 hours. What I have found is super useful if you have one, is to use an electrical whisker to shred your chicken. You don’t necessarily have to have a whisker, you can always pull apart the chicken with two forks. After shredding the chicken, in the crock pot, I suggest letting it sit on low for about 15 minutes. Lastly, don’t forget to set out your condiments. You can’t forget the guacamole and sour cream…if you ask me 😉

    Another delicious recipe that goes hand in hand with chicken tacos is Queso Fundido!

    1/2 pound of Ground Beef or Chorizo Sausage

    • 1 10 oz can diced tomatoes with green chiles (I prefer Red Gold but, Rotel is good also)
    • 1 green bell pepper (diced)
    • 1 sweet white or yellow onion (diced)
    • 1 8 oz package of cream cheese (softened)
    • 1 8 oz package of processed cheese (Velveeta)

    OR

    • 1 bag of shredded Mexican style cheese with 1/2 of milk
    • 1 oz can of diced green chiles or 1/4 chopped jalapenos
    • 1 handful of fresh cilantro chopped finely (optional)

    First, you want to brown the ground beef or chorizo on the stove top in a skillet with about 1 tablespoon of either olive oil or avocado oil. Drain and put meat into crock pot. Add all other ingredients into the crock pot and set to low. Stir occasionally during the cooking process. Ready in an hour and a half. Serve with tortilla chips. Enjoy!

    Even though my quarterback, Aaron Rodgers and his Packers, didn’t make it to the big game…you can still catch me at halftime with my mouth full of queso watching Shakira and J.Lo!
