    Hi there!  Sarah Smerz here.  This week, we’re trying out delicious tomato sauce.  The secret ingredient?  ANCHOVIES!  Sounds weird, but it gives the sauce a great tangy flavor.  Try it out today.  Your family and friends will love you more than they already do.

    INGREDIENTS:

    canned whole tomatoes, 28 oz

    garlic, minced

    olive oil

    unsalted butter, 2 tbsp

    large onion, finely chopped

    salt, to taste

    pepper, to taste

    anchovies, 1 tin or jar

    red pepper flakes, 1 teaspoon

    tomato paste, 1/2 cup

    dry red wine, 1/2 cup

    water, 1 cup

    spaghetti

    parmesan cheese, for grating

     

    DIRECTIONS:

    Add tomatoes to deep, large bowl.  Crush tomatoes until no large pieces remain.

    Add onion to olive oil and butter and garlic.  Cook stirring occasionally until the onion is softened., about 10 minutes.

    Add the anchovies and the oil they are packed in.  Cook, stirring occasionally, until dissolved into the oil, about 2 minutes.

    Add the red pepper flakes and stir to combine

    Add tomato paste

    Add red wine

    Reduce heat to medium-low and cook sauce for 1 1/2 to 2 hours at very low simmer.  Stir every 30 minutes

    Serve over spaghetti
