    The weather is finally starting to turn colder!  What’s better than a little homemade chicken noodle soup?  Warm, comforting, tasty…  it’s easy to make and totally worth it when you’re feeling dreary.  Try this recipe today!

     

    INGREDIENTS:

    Yellow onion, 1

    Carrots, 3

    Celery, 4 stalks

    Kosher salt

    Garlic, chopped

    Chicken broth, 8 cups

    Egg noodles, 8 oz.

    Coarsely shredded chicken, 4 cups

    Chopped parsley

    Grated parmesan

    DIRECTIONS:

    Cook down onion, carrots, celery, salt, and pepper until vegetables are soft, about 15 minutes.

    Add garlic, cook until fragrant.  Add stock and bring to a boil.

    Add noodles and cook for 6 minutes.  Add chicken and cook 2 minutes more- until noodles are soft and chicken is warmed through.

    Season to taste.  Stir in parsley.  Add parmesan.

    Enjoy!
